Butter Toffee Popcorn Crunch
Tonight I set out to make an easy sweet snack and thought Butter Toffee Peanuts sounded good. Well, we were out of peanuts but happened to have a 5 lb. bag of almonds in the pantry. In less than 5 minutes, this delicious sweet butter toffee coating was ready, almonds mixed in and a last minute decision was made to add popcorn!
Super easy, few ingredients, and depending on the type of nuts you use, it can be relatively inexpensive too.
To Make:
1 cup butter (two sticks)
1 cup sugar
3 TBL water
Mix butter, sugar & water in a heavy sauce pan on medium heat stirring frequently in the beginning. Once the temperature reaches 300 (use candy thermometer) let the water boil out and the sugar/butter mixture thicken. Do not stir at this point (should only take a minute). Remove from heat and add nuts, stirring to coat evenly. (optional: add popcorn to the mixture).
Place on a greased cookie sheet to cool.
*Note: Because the original idea/recipe was for Butter Toffee Nuts, the popcorn and nuts did not clump together as I would have liked (which would have made it easier to eat). Most recipes for that type contain corn syrup which this did not. However--this recipe was OH MY GOODNESS "Buttery Deliciously & Sweet"!
