Butter Toffee Popcorn Crunch

Tonight I set out to make an easy sweet snack and thought Butter Toffee Peanuts sounded good.  Well, we were out of peanuts but happened to have a 5 lb. bag of almonds in the pantry.  In less than 5 minutes, this delicious sweet butter toffee coating was ready, almonds mixed in and a last minute decision was made to add popcorn!

Super easy, few ingredients, and depending on the type of nuts you use, it can be relatively inexpensive too.

To Make:

1 cup butter (two sticks)
1 cup sugar
3 TBL water
Mix butter, sugar & water in a heavy sauce pan on medium heat stirring frequently in the beginning. Once the temperature reaches 300 (use candy thermometer) let the water boil out and the sugar/butter mixture thicken.  Do not stir at this point (should only take a minute)Remove from heat and add nuts, stirring to coat evenly. (optional: add popcorn to the mixture).
Place on a greased cookie sheet to cool.

*Note: Because the original idea/recipe was for Butter Toffee Nuts, the popcorn and nuts did not clump together as I would have liked (which would have made it easier to eat).  Most recipes for that type contain corn syrup which this did not.  However--this recipe was OH MY GOODNESS "Buttery Deliciously & Sweet"!

I Baked My First Batch of Cookies for Three Ring Circus Cookie Company


 


"Three Ring Circus Cookie Company" hatched today right out of my very own kitchen (on accident)! My vision for making and decorating cute little cookies turned into an idea to make some frosted, sprinkled animal cookies for my family.  From there, I used a cute tin I had laying around in my craft supplies.  Hmmmm....but it needs a name I thought.  Just then, as household chaos ensued and as I laughed I thought to myself (this place is a three ring circus) and voila!  The name took on a whole new meaning.  Maybe Three Ring Circus Baking Company is a better name?  I have an arsenal of recipes that are more than just cookies. Next up in the line-up are butter toffee peanuts.  After that, I think I need to go back to making hair clips & bows for my girls... I'm gaining too much weight standing around this kitchen.

Frozen Chocolate Chip Cookie Dough Pops


These days it seems if I'm not making a bottle or changing a diaper, I'm in the kitchen trying out new ventures...these cute little frozen treats were easy to make and can be done in many different variations.  I used lots of colorful sprinkles for the kids, but depending on my guests, I might skip the sprinkles and maybe do some drizzles of white chocolate designs.

These were a big hit during the homemade cookie dough process all the way to rolling them in melted chocolate and adding sprinkles.  The kids (and grown-ups) thoroughly enjoyed tonight's dessert!


  



                           
Make:

1. Prepare your favorite cookie dough. (I used the Nestle Toll    House Chocolate Chip recipe).
2. Roll into two inch balls and insert 4 inch lollipop sticks.
    I purchased them at Michael's Craft Store.
3. Wrap cookie dough balls in Saran Wrap & freeze over night.
4. When you're ready to coat them in chocolate, melt chocolate chips in the microwave or  
     double boiler.
5. Pull the frozen pops out of the freezer and dip them in melted chocolate, using a spoon to 
    help cover the dough evenly.
6. Sprinkle with desired sprinkles and freeze until ready to serve.

Tex-Mex Meets Southern Cooking

In brainstorming for an upcoming shindig, I've decided to combine a menu of Tex-Mex and Southern Style Cooking.  Starting with snacks and finger foods, I whipped up a trial run of homemade spicy peanuts recipe courtesy of Epicurious.com  A nice mix of paprika, cayenne pepper, fresh squeezed lime juice and cilantro (last minute addition) made for a nice little snack to nosh on.  These colorful peanuts can be displayed, served or passed out in a variety of cute little dishes or paper cone cups.  Stay tuned for more pics and recipes like
homemade flour tortillas, marinated flank steak, and all the Tex-Mex fixin's in addition to deep fried hush puppies with bacon, funnel cakes, and more.
